Soft gel food color works best for painting icing sheets because it has just enough moisture to glide on evenly with a paint brush, but not so much that it will cause the icing sheet to soften. Soft gel food color is a little looser than paste gel food color. Bring the cake to room temperature before serving. Refrigerate the cake until firm and the decorations are set, about 30 minutes. Use the edge of a ruler to easily guide the knife to cut the straight edges. Lay one of the templates on top of an icing sheet and cut out the shapes through the paper using a kitchen-dedicated X-Acto knife. Lay a cutting mat or board on a work surface. Turn the cakes out onto the wire racks and remove the parchment rounds cool completely.įor the navy blue buttercream and decorations: In the bowl of an electric mixer, beat the butter on high speed until light and fluffy, about 3 minutes. Transfer the pans to wire racks and let cool for 10 minutes. Bake until the cakes are slightly domed and a toothpick tester inserted near the centers of the cakes comes out clean, about 30 minutes. Smooth the batter using an offset spatula. Scrape down the bowl with a rubber spatula and fold the batter together to make sure no pockets of white batter remain.ĭivide the batter evenly among the prepared pans (slightly more than 2 cups of batter per pan).
